Friend of a Friend Corn

start by removing silk from corn, but keep husks on.  soak corn in cold water for 60 mins.

soften butter to room temp.  stir in with fork 1 tbsp. minced garlic, 1/2 c finely chopped cilantro, 1 tsp. salt, 1 tsp black pepper.  finely grate queso fresco (like the consistency of store-bought parmesan).
preheat one half of grill to 400 deg or so.  grill corn over med-high heat, charring husks and getting some kernels blackened.  once this is achieved, move corn to cooler half of grill and let cook through.
when done, remove corn to plate, shuck, and slather with butter mixture.  sprinkle with cheese, then cayenne pepper.  squeeze fresh lime juice over, enjoy.
