Pork Chops a la Heather

This recipe was concocted totally on the fly, and can be adapted to taste and servings.  But here’s the idea:

boneless pork chops (i got the really thin sliced ones that were on sale)
corn meal (i used johnny cake mix from a local farm)
olive oil (i used some rosemary olive oil that i had made myself)
small onion
Penzey’s pork spice

heat olive oil in a pan.  chop the onion into small pieces and then sautee until cooked.  add about 1/4 cup of the corn meal and 1/4 cup of the Penzey’s spices to a plastic bag.  Add the pork to the bag and shake (a la shake and bake style) and then add to pan.  Cook each chop for about 4 minutes per side or until cooked.

Serve and try not to eat too many.  It’s hard to resist!
