As the week is just starting, I have all sorts of cooking mischief up my sleeve for the week ahead. Goodies like roast chicken, chocolate and zucchini cake, potato and pancetta salad, and roasted red pepper breakfast sandwiches.

The best news is that everything is gluten-free, and HEALTHY.  I also follow Weight Watchers, so everything I make has to have a reasonable point conversion so I don’t blow my diet and have to change my website from Healthful Heather to the Chubby Celiac!
